🔥 Recipe: Herb-Crusted Wagyu Top Round Roast



Ingredients:


  • 1 H+J 50/50 American Wagyu Top Round Roast (2.5–3 lbs)
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tbsp cracked black pepper
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 4 cloves garlic, minced



Instructions:


  1. Bring to Room Temp: Let the roast sit out for about 30–45 minutes before cooking. Preheat oven to 450°F.
  2. Season: Mix olive oil, salt, pepper, herbs, and garlic. Rub generously over the entire roast.
  3. Sear: Place roast in a roasting pan or cast iron skillet. Roast at 450°F for 15 minutes to sear the outside.
  4. Roast Low & Slow: Reduce oven temp to 325°F and roast for 60–75 minutes, or until internal temp reaches 130°F for medium-rare.
  5. Rest & Slice: Let roast rest 15–20 minutes before slicing thin against the grain.



Serving Ideas:


  • Pair with mashed potatoes and roasted carrots
  • Serve cold as thin-sliced roast beef for sandwiches
  • Dice and reheat in beef gravy for a next-day comfort meal

We have three options available:

  1. At checkout you can choose three pickup locations: Two locations in Richland and one at the farm in Saluda. We will set up a time once order is placed.
  2. At checkout choose standard mail delivery. We are still trying to get shipping cost down.
  3. At checkout chose local delivery. We will hand deliver it to you. Again we will contact you about best times. There is no fee when an order is over x amount it's set up on a sliding scale. Farther away you are the more the minimum purchase is for free delivery but no matter the purchase amount we will deliver. Small purchases will have a fee.
