Introducing our 50/50 American Wagyu Short Ribs—an unbeatable blend of luxurious marbling and old-school beef flavor. These ribs come from cattle bred with 50% American Wagyu and 50% traditional beef genetics, giving you all the richness you want without going overboard on fat.
Slow-cooked, smoked, braised, or grilled—these short ribs are your blank canvas for serious comfort food. Thanks to their deep marbling and thick cut, they transform into fall-apart tender bites loaded with beefy goodness when cooked low and slow.

You get elevated flavor and tenderness from Wagyu genetics, but with the hearty texture and classic taste you expect from American beef. Plus, a better price point than purebred Wagyu.

🔥 Recipe: Red Wine Braised Wagyu Short Ribs
Ingredients:
- 3 lbs H+J 50/50 American Wagyu Short Ribs
- Salt + cracked black pepper
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 carrots, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 2 cups dry red wine
- 2 cups beef stock
- 2 sprigs rosemary
- 3 sprigs thyme
Instructions:
- Preheat oven to 325°F.
- Season ribs generously with salt and pepper.
- Heat oil in a Dutch oven and sear ribs on all sides until browned. Remove and set aside.
- In the same pot, sauté onions, carrots, and garlic until soft. Add tomato paste and cook for 2 more minutes.
- Pour in wine, scraping up any browned bits. Add stock and herbs.
- Return ribs to the pot. Liquid should mostly cover the meat. Bring to a simmer.
- Cover and braise in the oven for 2.5 to 3 hours, until fork-tender.
- Serve over mashed potatoes or creamy polenta, spooning sauce over the top.

We have three options available:
- At checkout you can choose three pickup locations: Two locations in Richland and one at the farm in Saluda. We will set up a time once order is placed.
- At checkout choose standard mail delivery. We are still trying to get shipping cost down.
- At checkout chose local delivery. We will hand deliver it to you. Again we will contact you about best times. There is no fee when an order is over x amount it's set up on a sliding scale. Farther away you are the more the minimum purchase is for free delivery but no matter the purchase amount we will deliver. Small purchases will have a fee.
