Recipe: Wagyu Smash Burgers with Garlic Aioli

Serves 4

Ingredients:

• 1.5 lbs H+J 50/50 Wagyu Ground Beef
• Salt & black pepper
• 4 burger buns
• 4 slices cheddar or American cheese
• 1 tbsp butter (for toasting buns)

Garlic Aioli:

• 1/2 cup mayo
• 1 clove garlic, minced
• 1 tsp Dijon mustard
• 1 tsp lemon juice

Instructions:

1. Mix together aioli ingredients and chill.
2. Divide ground beef into 4 loose balls (don’t overwork).
3. Heat a cast-iron skillet or griddle to high.
4. Place beef balls on the skillet and smash flat with a spatula. Season with salt and pepper.
5. Cook ~2 minutes per side. Add cheese, melt, and remove.
6. Toast buns with butter.
7. Assemble burgers: spread aioli, add patties, and top with your favorite fixings.
