Recipe: Garlic-Herb Crusted Top Round Roast

Ingredients:

• 1 H+J Cattle Co. Hereford Top Round Roast (2.5–3.5 lbs)
• 2 tbsp olive oil
• 4 cloves garlic, minced
• 1 tbsp kosher salt
• 1 tsp black pepper
• 1 tbsp fresh rosemary (or 1 tsp dried)
• 1 tbsp fresh thyme (or 1 tsp dried)

Instructions:

1. Bring to Room Temp: Let your roast sit out for 30–45 minutes. Preheat oven to 450°F.
2. Make the Rub: Combine olive oil, garlic, salt, pepper, rosemary, and thyme in a bowl.
3. Rub & Roast: Rub the mixture all over the roast. Place on a rack in a roasting pan.
4. Sear: Roast at 450°F for 15 minutes, then reduce heat to 325°F and cook for 60–75 minutes or until internal temp hits 130°F for medium-rare.
5. Rest & Slice: Remove from oven, tent with foil, and rest for 15–20 minutes before slicing thin against the grain.

Pro Tip: Leftovers make killer roast beef sandwiches—just add horseradish mayo and sourdough.
