Recipe: Braised Oxtail with Red Wine & Root Vegetables
Ingredients:
- 2.5 lbs H+J Premium Oxtail
- Salt & pepper
- 2 tbsp oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 2 tbsp tomato paste
- 1.5 cups red wine
- 3 cups beef broth
- 2 sprigs thyme
- 2 bay leaves
Instructions:
- Season & Sear: Pat oxtail dry, season with salt and pepper. Sear in oil on all sides in a heavy pot or Dutch oven until browned. Set aside.
- Build the Base: In the same pot, sauté onion, carrot, celery, and garlic until soft. Stir in tomato paste and cook 2 minutes.
- Deglaze & Braise: Pour in red wine, scraping the bottom. Add broth, herbs, and oxtail back to the pot.
- Cook Low & Slow: Cover and braise at 300°F for 3.5–4 hours, until meat is fall-off-the-bone tender.
- Serve: Spoon over mashed potatoes, rice, or creamy polenta.

We have three options available:
- At checkout you can choose three pickup locations: Two locations in Richland and one at the farm in Saluda. We will set up a time once order is placed.
- At checkout choose standard mail delivery. We are still trying to get shipping cost down.
- At checkout chose local delivery. We will hand deliver it to you. Again we will contact you about best times. There is no fee when an order is over x amount it's set up on a sliding scale. Farther away you are the more the minimum purchase is for free delivery but no matter the purchase amount we will deliver. Small purchases will have a fee.
