Grilled Coulotte with Chimichurri
What You’ll Need:
- 1 Hereford Coulotte Steak (room temp)
- Kosher salt & fresh cracked pepper
- Olive oil
For the Chimichurri:
- 1 cup fresh parsley
- 3 garlic cloves
- 2 tbsp red wine vinegar
- ½ tsp chili flakes
- ½ cup olive oil
- Salt & pepper to taste
Instructions:
- Prep the Steak: Score the fat cap lightly in a crosshatch pattern. Season generously with salt and pepper. Let it rest for 30 minutes.
- Make the Chimichurri: Blend all chimichurri ingredients or chop finely and mix in a bowl. Let sit for 15 minutes to meld flavors.
- Grill Time: Sear the Coulotte fat-side down first over medium-high heat. Grill for 3–4 minutes per side for medium-rare (125–130°F internal).
- Rest & Slice: Let it rest 10 minutes, then slice against the grain into thin strips.
- Serve: Drizzle with chimichurri and serve with roasted potatoes, fresh greens, or grilled veggies.

We have three options available:
- At checkout you can choose three pickup locations: Two locations in Richland and one at the farm in Saluda. We will set up a time once order is placed.
- At checkout choose standard mail delivery. We are still trying to get shipping cost down.
- At checkout chose local delivery. We will hand deliver it to you. Again we will contact you about best times. There is no fee when an order is over x amount it's set up on a sliding scale. Farther away you are the more the minimum purchase is for free delivery but no matter the purchase amount we will deliver. Small purchases will have a fee.
