Farm-Fresh Egg & Herb Frittata (Feeds 4-6)

Ingredients:

• 8 H+J farm-fresh eggs
• 1/2 cup whole milk or cream
• 1 cup cooked vegetables (like spinach, mushrooms, or zucchini)
• 1/2 cup shredded cheese (cheddar, feta, or goat cheese work great)
• 2 tablespoons fresh herbs (chives, parsley, or thyme)
• Salt & pepper to taste
• 1 tbsp butter or olive oil

Instructions:

1. Preheat oven to 375°F.
2. In a large bowl, whisk together the eggs, milk, salt, pepper, and herbs.
3. Heat butter or oil in an oven-safe skillet over medium heat.
4. Add the cooked vegetables and sauté for 2–3 minutes.
5. Pour in the egg mixture and sprinkle cheese over the top.
6. Cook on the stovetop until edges begin to set, about 3–4 minutes.
7. Transfer skillet to the oven and bake for 10–12 minutes, or until the center is just set.
8. Let cool slightly, slice into wedges, and serve warm.
